Pumpkin Halwa

Ingredients

  • 1 medium sized pumpkin 600g/1.3lb of the pumpkin whole, with skin and seeds all in, equating to 400g/0.8lb grated
  • ¼ teaspoon cardamom powder
  • 1 ½ cup (375 ml) whole milk
  • cup (65 g) ghee
  • ½ cup (100 g) cup sugar
  • Nuts to garnish

Instructions

  • 1. Add the grated pumpkin, cardamom powder and whole milk to a pot or pan. Heat over a high heat, stirring often until the mixture becomes very dry,
  • 2. Add in the sugar. It'll melt and liquify - continue to stir and dry out the mixture over a high heat until it begins to look dry again.
  • 3. Add the ghee/oil in. Continue to cook over a high heat, stirring often. The mixture will turn to a glossy, dark shade of orange.
  • 4. Keep stirring the mixture until the it begins to pull away from the pan and looks fudgy.
  • 5. Garnish with nuts and serve warm.

Notes

You can add some orange food colouring if you would like to intensify the colour.
